Baby Bento Coconut Weet-Bix Snack Bar Recipe

Coconut Weet-Bix Snack Bars

This is one of my all-time favourite healthy snack ideas that you can freeze ready for school. The great thing about these healthy snacks bars, other being super tasty is that you can cut them to size to fit all of our bento boxes and pop them in frozen and by recess they are thawed and ready to eat

Coconut Weet-Bix Snack Bar  (makes 1 square baking tray)

4 Weet-Bix crushed

50g butter melted

1/2 cup of fine desiccated coconut

1 cup of flour

4 tablespoons of honey

1/4 cup of sultana finely chopped

1/4 cup of water

Prep: Pre-heat the oven to 180 degrees

- Place all the ingredients in a bowl and mix well until nice and wet

- Line the baking tray with baking paper, place the mixture and press firmly

- Bake it for 15 minutes, cut to sizes when cooled

Coconut oil is a great alternative to butter. Add seeds or dried fruits to your liking and you can use more or less honey if you wish to.

This was a big hit with my little man. .I  am not a big fan of snack bars, but this was so good! Double or even triple the ingredients to make a big batch for a back to school ready to go lunchbox snack
